1 1/2 cups of Irene’s Mayonnaise
4 gherkins, three shallots and the yoke of one hardboiled egg, all minced,
1 tablespoon each of minced capers, minced parsley and grated onion.
1 tablespoon each of minced tarragon and minced fresh chive or 1 teaspoon each of dried,
1 teaspoon each of Dijon mustard, lemon juice, and sugar, salt pepper to taste.
Mix all ingredients well. Cover and chill until ready to serve.
